Korean Vegan Bibimbap


Don’t be overwhelmed by the looks of it, this Korean Vegan Bibimbap recipe is actually really simple and perfect for a fancy weeknight dinner! And you can even prep the ingredients in advance to help save you some time! 

Here’s our take on this classic sweet and savoury Korean dish, made with our very own Craft-It-Yourself! Plant-Based Ground Meat

INGREDIENTS

Vegan Bibimbap Ground Meat

Assorted Veggies 

  • 1 bell pepper, sliced into strips
  • 1 carrot, sliced into matchsticks
  • 1 zucchini, cut into half lengthwise and thinly sliced 
  • 1 cucumber, cut into thin half-moon slices 
  • 3 cups spinach
  • 1 cup shiitake mushroom, sliced 
  • ½ tbsp olive oil each when sautéing 
  • 2 tsp sesame oil each when sautéing 
  • Salt to taste

Steamed Rice

  • Prepare steamed rice

Ready to eat?

  • Add Gochujang to taste, mix well and enjoy!

INSTRUCTIONS

Vegan Bibimbap Ground Meat

  1. Follow the instructions for preparing the Craft-It-Yourself! Plant-Based Ground Meat
  2. Marinate the vegan meant with minced garlic, sesame oil and sugar for 10 minutes.
  3. Over medium-high heat, add olive oil to your pan.
  4. Add the marinated vegan meat. 
  5. Sauté until the vegan meat turns light brown. Set aside. 

Assorted Veggies 

  1. Over medium-high heat, add olive oil to your pan. 
  2. Add only one veggie to your pan and sauté until softened.
  3. Add sesame oil and salt to taste. 
  4. Set aside and repeat until all veggies are sautéed. 

Plating

  1. Prepare a bowl of hot steamed rice.
  2. Place each veggie in a separate corner of the bowl in the clockwise direction.
  3. Add the cooked vegan meat in the middle. 
  4. Drizzle Gochujang to the finished bowl, mix well and enjoy!
