
This warm Vegan Asian Noodle Soup requires minimal effort, yet it’s super delicious and satisfying. You can spice it up however you like!
This recipe is loaded with mushrooms and our very own Neokit™ - Plant-Based Ground Meat Kit, but the quantities and veggies are easily customizable to your liking! Just what you need for a cozy weeknight dinner!

INGREDIENTS

Minced Vegan Meat
- 1 cup Neophyto Foods: Neokit™ - Plant-Based Ground Meat Kit
- 1½ cup mushrooms, sliced
- 1 tbsp minced garlic
- 2 tbsp olive oil
- 1 tbsp soy sauce
- 1 tbsp Sriracha sauce (optional)
- ½ tbsp sugar (optional)
- White pepper to taste
Noodle Soup
- 1 cup scallions, thinly sliced
- 1 L mushroom or veggie stock
- 4 servings of store-bought wheat noodles of your choice
INSTRUCTIONS
Minced Vegan Meat
- Follow the instructions for preparing the Neokit™.
- Over medium-high heat, add olive oil to the pan and sauté your garlic and mushrooms.
- Add our Plant-Based Ground Meat. Cook until browned.
- Season with soy sauce, sriracha sauce, sugar and white pepper.

Noodle Soup
- Boil a big pot of water (1-1.5L)
- Cook your noodles for 2 minutes less than package instructions.
- Rinse out the water.
- Add your stock to the pot, and cook until it boils.
- Serve your noodles in a bowl, top with the minced vegan meat and finally garnish with sliced scallions. Enjoy this recipe and warm yourself up in this cold weather!
