Vegan Italian Meatball Soup

These flavourful and tender meatballs are made using our Craft-It-Yourself! Plant-Based Ground Meat - perfect for transforming this traditional dish into delicious vegan good-ness!

INGREDIENTS

Vegan Meatballs

 Soup

  • 2 cups celery stalk, diced
  • 1 cup onion, diced
  • ½ cup carrots, diced
  • 2 tbsp minced garlic
  • 4 tbsp olive oil
  • 2 cans tomato sauce 
  • 1 tbsp Italian seasoning
  • Water or white wine to taste
  • 1½ cup pasta of your choice
  • Freshly chopped parsley to taste
  • Salt and pepper to taste

INSTRUCTIONS

Vegan Meatballs

  1. Follow the instructions for preparing the Craft-It-Yourself! Plant-Based Ground Meat
  2. Add all the ingredients in a bowl. Mix well.
  3. Form small meatballs and place them on a dry plate. 
  4. Over medium-high heat, pan-fry your vegan meatballs till browned. Set aside. 

 Soup

  1. Over medium heat, add olive oil to your pan and sauté chopped celery stalk, onion, carrots and garlic. 
  2. Add tomato sauce to your pan, stir with sautéed veggies till fragrant. 
  3. Transfer your sautéed ingredients and Italian seasoning to a pot; add water or wine to taste. Bring to a boil. Season with salt and pepper accordingly. 
  4. Add your vegan meatballs. Cook for 10 minutes till the veggies are softened. 
  5. Garnish with freshly chopped parsley and enjoy!
