INGREDIENTS

Vegan Meatballs

  • 1 cup Neophyto Foods: Neokit™ - Plant-Based Ground Meat Kit
  • 1 tbsp minced garlic
  • 1 tbsp Italian seasoning
  • Fresh parsley, chopped to taste 
  • Salt and pepper to taste
  • 2 tbsp olive oil for frying

 Soup

  • 2 cups celery stalk, diced
  • 1 cup onion, diced
  • ½ cup carrots, diced
  • 2 tbsp minced garlic
  • 4 tbsp olive oil
  • 2 cans tomato sauce 
  • 1 tbsp Italian seasoning
  • Water or white wine to taste
  • 1½ cup pasta of your choice
  • Freshly chopped parsley to taste
  • Salt and pepper to taste

INSTRUCTIONS

Vegan Meatballs

  1. Follow the instructions for preparing the Neokit™.
  2. In a bowl, add your plant-based ground meat mix, minced garlic, Italian seasoning, parsley, salt and pepper. Mix well!
  3. Form small meatballs and place them on a dry plate. 
  4. Over medium-high heat, pan-fry your vegan meatballs in olive oil until browned. Set aside. 

 Soup

  1. Over medium heat, add olive oil to your pan and sauté chopped celery stalk, onion, carrots and garlic. 
  2. Add tomato sauce to your pan, stir with sautéed veggies until fragrant. 
  3. Transfer your sautéed ingredients and Italian seasoning to a pot; add water or wine to taste. Bring to a boil. Season with salt and pepper accordingly. 
  4. Add your vegan meatballs. Cook for 10 minutes until the veggies are softened. 
  5. Garnish with freshly chopped parsley and enjoy!
