
This hearty Vegan Italian Meatball Soup is guaranteed to satisfy your tastebuds!
These flavourful and tender meatballs are made using our Neokit™ - Plant-Based Ground Meat Kit - perfect for transforming this traditional dish into delicious vegan good-ness!

INGREDIENTS
Vegan Meatballs
- 1 cup Neophyto Foods: Neokit™ - Plant-Based Ground Meat Kit
- 1 tbsp minced garlic
- 1 tbsp Italian seasoning
- Fresh parsley, chopped to taste
- Salt and pepper to taste
- 2 tbsp olive oil for frying
Soup
- 2 cups celery stalk, diced
- 1 cup onion, diced
- ½ cup carrots, diced
- 2 tbsp minced garlic
- 4 tbsp olive oil
- 2 cans tomato sauce
- 1 tbsp Italian seasoning
- Water or white wine to taste
- 1½ cup pasta of your choice
- Freshly chopped parsley to taste
- Salt and pepper to taste
INSTRUCTIONS
Vegan Meatballs
- Follow the instructions for preparing the Neokit™.
- In a bowl, add your plant-based ground meat mix, minced garlic, Italian seasoning, parsley, salt and pepper. Mix well!
- Form small meatballs and place them on a dry plate.
- Over medium-high heat, pan-fry your vegan meatballs in olive oil until browned. Set aside.
Soup
- Over medium heat, add olive oil to your pan and sauté chopped celery stalk, onion, carrots and garlic.
- Add tomato sauce to your pan, stir with sautéed veggies until fragrant.
- Transfer your sautéed ingredients and Italian seasoning to a pot; add water or wine to taste. Bring to a boil. Season with salt and pepper accordingly.
- Add your vegan meatballs. Cook for 10 minutes until the veggies are softened.
- Garnish with freshly chopped parsley and enjoy!
