Italian Wedding Soup with Vegan Meatballs

Fall is here! And what better way to warm up to the cool weather than with a cozy Italian Wedding Soup made with vegan meatballs! 

This go-to soup is so delicious and easy to make. For the meatballs, we used our Neokit™ - Plant-Based Ground Meat Kit to achieve the absolute perfect taste and texture!

Vegan Meatballs

  • 1 cup Neophyto Foods: Neokit™ - Plant-Based Ground Meat Kit
  • 1 tbsp minced garlic
  • 1 tbsp Italian seasoning
  • Fresh parsley, chopped to taste 
  • Salt and pepper to taste
  • 2 tbsp olive oil for frying

  • 2 cups celery stalk, diced
  • 1 cup onion, diced
  • ½ cup carrots, diced
  • 3 tbsp olive oil
  • 1 L veggie stock
  • Water to taste 
  • 1½ cup pasta of your choice
  • Salt and pepper to taste


Tiny Vegan Meatballs

  1. Follow the instructions for preparing the Neokit™
  2. In a bowl, add your plant-based ground meat mix, minced garlic, Italian seasoning, parsley, salt and pepper. Mix well!
  3. Form small meatballs and place them on a dry plate. 
  4. Over medium-high heat, pan-fry your vegan meatballs in olive oil until browned. Set aside. 

Italian Wedding Soup

  1. Over medium heat, add olive oil to your pan and sauté chopped celery stalk, onion and carrots. 
  2. Transfer your sautéed ingredients to a pot, add veggies stocks, some water and pasta. Bring to a boil. Season with salt and pepper accordingly. 
  3. Add your vegan meatballs. Cook for 10 minutes until the veggies are softened. 
  4. Enjoy!
