Vegan Shepherd’s Pie


This cozy Vegan Shepherd’s Pie is perfect for the Fall weather. A medley of hearty vegetables, broth and our very own Neokit™ - Plant-Based Ground Meat Kit baked to perfection! A delicious dish that everyone will enjoy!

INGREDIENTS

Shepherd’s Pie Filling

  • 1/2 cup Neophyto Foods: Neokit™ - Plant-Based Ground Meat Kit
  • 2 tbsp olive oil
  • 3 shallots, minced  
  • 1 cup diced mushrooms
  • 1 cup frozen veggies 
  • 2 tbsp tomato paste
  • 1-1½ veggie/mushroom broth
  • ½ cup red wine
  • 1 tbsp Italian seasoning
  • Salt to taste 

Mashed Potatoes

  • 3-4 large potatoes 
  • 3 tbsp Vegan butter or olive oil
  • Salt and pepper to taste

INSTRUCTIONS

 

Shepherd’s Pie Filling

  1. Follow the instructions for preparing the Neokit™
  2. Over medium heat, add olive oil and sauté minced shallots.
  3. Add diced mushrooms, and then add our Plant-Based Ground Meat to the pan and cook until the colour turns light brown. 
  4. Add frozen veggies to your pan and sauté until softened. 
  5. Add tomato paste and Italian seasoning; sauté for 1-2 minutes. 
  6. Add your veggie broth, red wine and salt to taste. 
  7. Over medium-high heat, bring the pan to boil. 
  8. Turn off the heat when the consistency is thickened. 
  9. Transfer the filling to your container suitable for baking. 

 Mashed Potatoes

  1. Preheat the oven to 350ºF.
  2. Wash your potatoes and put them in a pot of water. Bring to a boil and cook until the potatoes are cooked through.
  3. Remove the potatoes, leave them to cool for 10 minutes, and peel them.
  4. Mash your potatoes and add olive oil or vegan butter, salt and pepper.
  5. Add the mashed potatoes to your container for baking, on top of the shepherd’s pie filling. 
  6. Bake for 15 minutes at 350ºF
  7. Once baked, allow the dish to cool for 5 minutes before serving. Enjoy!
