
This cozy Vegan Shepherd’s Pie is perfect for the Fall weather. A medley of hearty vegetables, broth and our very own Neokit™ - Plant-Based Ground Meat Kit baked to perfection! A delicious dish that everyone will enjoy!

INGREDIENTS
Shepherd’s Pie Filling
- 1/2 cup Neophyto Foods: Neokit™ - Plant-Based Ground Meat Kit
- 2 tbsp olive oil
- 3 shallots, minced
- 1 cup diced mushrooms
- 1 cup frozen veggies
- 2 tbsp tomato paste
- 1-1½ veggie/mushroom broth
- ½ cup red wine
- 1 tbsp Italian seasoning
- Salt to taste
Mashed Potatoes
- 3-4 large potatoes
- 3 tbsp Vegan butter or olive oil
- Salt and pepper to taste
INSTRUCTIONS
Shepherd’s Pie Filling
- Follow the instructions for preparing the Neokit™.
- Over medium heat, add olive oil and sauté minced shallots.
- Add diced mushrooms, and then add our Plant-Based Ground Meat to the pan and cook until the colour turns light brown.
- Add frozen veggies to your pan and sauté until softened.
- Add tomato paste and Italian seasoning; sauté for 1-2 minutes.
- Add your veggie broth, red wine and salt to taste.
- Over medium-high heat, bring the pan to boil.
- Turn off the heat when the consistency is thickened.
- Transfer the filling to your container suitable for baking.
Mashed Potatoes
- Preheat the oven to 350ºF.
- Wash your potatoes and put them in a pot of water. Bring to a boil and cook until the potatoes are cooked through.
- Remove the potatoes, leave them to cool for 10 minutes, and peel them.
- Mash your potatoes and add olive oil or vegan butter, salt and pepper.
- Add the mashed potatoes to your container for baking, on top of the shepherd’s pie filling.
- Bake for 15 minutes at 350ºF.
- Once baked, allow the dish to cool for 5 minutes before serving. Enjoy!
